We eat heaps of mexican meals in our household and tortillas is one of them. Tortillas are super easy to make and delicious, my brothers are always asking me to make them for dinner so they can have some too. If you are gluten free you can easily swap out the tortillas for baked potatoes or kumara, tacos, or just buy some gluten free tortillas to substitute. This is also a really good meal to make while camping cause it is super quick and easy to make, or to take on a picnic dinner.

Ingredients

Pack of 10-12 tortillas

Things to fill tortillas with, aside from beans (optional): guacamole, salsa, tinned beetroot, lettuce or salad leaves, grated carrot, aioli. Personally, I just enjoy guacamole, beans and tinned beetroot in mine, (and a little aioli if we’ve got any already made up in the fridge) but thought I’d chuck in a few more suggestions for you guys.

Bean Filling

Ingredients 

1 onion diced

1/2 capsicum diced

1 Tbsp coconut oil (or oil of your choosing)

1 tsp cumin

1 tsp coriander

Optional: hot sauce, chilli powder, fresh chilli (to your liking)

2 cans re-fried beans (I use old el paso) or *kidney beans

Salt & Pepper

Method

  1. Melt oil in fry pan or pot over medium heat. Once melted, add in onion and capsicum. Cook until onions are cooked through (see through)
  2. Add in all the other ingredients and stir.

*If using kidney beans, I would add in a Tbsp of tomato paste and a tsp of sweet chilli to give it a little more flavour. I like mashing it all together at the end too, to give it a nice consistency, but up to you.
