This has to be one of my favourite breakfasts. Quick and easy, yet so tasty. Another bonus to this one is that Mark, my dad usually cooks it for me so I can be lazy in the morning and have breakfast served to me. I hope you guys enjoy this recipe!
(Serving size as indicated in photo)
1/2 onion finely diced
1 heaped tsp coconut oil (or oil of your choosing)
1/4 courgette finely diced
1/3 capsicum finely diced
2 cloves garlic finely sliced
1 tomato diced
Salt & Pepper
Quantity you desire of your choice of spice (hot sauce, jalapenos, chilli powder, fresh chilli)
Small pinch paprika
1 tsp sweet chilli
1 heaped Tbsp tomato paste
2 hash browns
- In a frying pan heat oil. Once oil heated, turn element onto a low heat add in onion, courgette, capsicum and garlic. Let caramelise.
- Once caramalised, add in tomato, sweet chilli, tomato past, salt & peppe, spice and paprika. Keep over low heat and stir occasionally.
- Cook hash browns. (Heat a drizzle of oil in a frying pan and once heated, add in hash browns. Cook over medium heat until golden brown on both sides).
- Place hash browns on plate and top with spicy medley. Now eat up and enjoy 🙂
