This is such a yummy dressing and it goes with so many things. I recommend making a big bulk of it and leaving in the fridge over the week to have along side many other meals. I love the Revive Cafe cookbook and many of my recipes use their pesto and aioli in them because they add such nice flavour and seem to go with everything!
Makes 3 cups
1/2 cup soy milk
1 Tbsp cider vinegar or lemon juice
3 cloves garlic
1 Tbsp whole grain mustard
1/2 tsp salt
2 cups oil
1/2 to 1 cup room temperature water
- Select a blender, food processor or stick blender.
- Blend all ingredients (except oil and water).
- While blending, slowly add oil and then add water at room temperature until desired consistency is reached.
Aioli will last 2-3 weeks in your refrigerator.
