This is such a yummy dressing and it goes with so many things. I recommend making a big bulk of it and leaving in the fridge over the week to have along side many other meals. I love the Revive Cafe cookbook and many of my recipes use their pesto and aioli in them because they add such nice flavour and seem to go with everything!

Makes 3 cups


1/2 cup soy milk

1 Tbsp cider vinegar or lemon juice

3 cloves garlic

1 Tbsp whole grain mustard

1/2 tsp salt

2 cups oil

1/2 to 1 cup room temperature water

  1. Select a blender, food processor or stick blender.
  2. Blend all ingredients (except oil and water).
  3. While blending, slowly add oil and then add water at room temperature until desired consistency is reached.

Aioli will last 2-3 weeks in your refrigerator.
