This is a delicious dip and it seems to go with everything! This recipe is out of the Revive cafe cookbook. I have been to the Revive cafe in Auckland can highly recommend their beautiful vegan (and vegetarian) dishes. Very reasonably priced for the filling, healthy meals they are, too.

This pesto is perfect in sandwiches, on salads, pasta and pizza or on top of crackers, I use it heaps.


1 large bunch basil

1/2 cup rice bran oil

1 cup raw cashew nuts (you can use walnut or almonds instead)

1/2 tsp salt

1/4 cup lemon juice

2 cloves garlic


Put all ingredients into a food processor and blend until it is well mixed, but there are still some nut pieces showing. (You can use a stick blender but you will have to add a little more oil or water to make the mixture turn).
